Booster Seat

Sunday we put Trevor up to the table for a meal.
Trevor is thinking Mom can not get over here fast enough with that food


I think he likes the Cordon Bleu Chicken Breast, Chicken Rice A Roni and Green Beans that I pureed for him

Frosty The Snowman

Frosty the snowman was on this evening. I just love this half-our animated Christmas special that has aired on CBS every December since it's late Sixties premiere. It is based on the classic Christmas song of the same name. It makes me all warm and fuzzy inside. Trevor and I just rocked and watched Frosty the Snowman this evening. Then it was followed by the sequel Frosty Returns. I don't care for this one. Nothing can top the good old Frosty the Snowman.

Chocolate Layered Dessert

Tuesday evening when the family got together in Scottsdale, I could not show up without bringing something. You know me, I love to cook. I figured the children would like the creamy pudding inside this dessert (and big children would like it too)!

1/2 cup (1 stick) butter
1 1/4 cups confectioners sugar, divided
1 cup all-purpose flour
1 1/8 cups chopped pecans, divided
1 (8-ounce) package cream cheese, softened
1 (8-ounce) container frozen whipped topping, thawed
2 (3.4-ounce) packages instant chocolate pudding mix
3 cups milk

Preheat oven to 300. Coat a 9x13 baking dish with non-stick cooking spray.

In a medium bowl, cream together butter with 1/4 cup sugar. Mix in flour and 1 cup pecans. Press into a prepared dish. Bake for about 15 minutes until lightly browned. Allow to cool completely.

In a bowl, cream together cream cheese with remaining 1 cup confectioners sugar. Fold in half of whipped topping. Spread over cooled crust.

Stir together pudding mix and milk. Spread over cream cheese layer. Top with remainder of whipped topping and sprinkle with remaining nuts. Keep refrigerated until ready to serve.
