Chuck E Cheese

Sunday May 17th we were invited to Chuck E Cheese here in Mesa by Brett and Megan. Brett set the evening up. He knew Patty Galas (Creighton Basketball Secretary) was in Mesa watching her grandchildren. So it was a wonderful place to meet, because then the children could play and run around. A huge thank you goes out to Brett for a great evening.

Wild Brunch

On Mother's Day we dined with wild animals, real ones, not just my child at the Phoenix Zoo. We enjoyed a catered brunch, and then roamed the zoo. The menu from Santa Barbara Catering Company included mushroom and Brie quesadillas with scrambled eggs, roasted potatoes with thyme and garlic, fruit, croissants and muffins, even mimosas.

It was over 100 degrees at the zoo. When we got home the three of us headed straight for the pool. Trevor is on his fish, saying hello (notice how his arm/hand is near his ear. He must see his parents on the phone quite a bit.)

Creamy Mashed Potatoes

A couple weeks ago I made these potatoes with Buffalo BBQ Ribs. They were very tasty I must say. And Trevor just loves his meat and potatoes.

1 (5-pound) bag red potatoes, cut into 1-inch pieces (I just used baking potatoes since that is what I had on hand. I did peel mine.)
3/4 cup sour cream
1/2 cup butter, softened
1 (3-ounce) package cream cheese, softened
2 teaspoons salt
1/2 teaspoon ground black pepper

In a large Dutch oven, combine potatoes and water to cover. Bring to a boil over high heat. Reduce heat, and simmer for about 10 minutes, or until potatoes are tender. Drain well.

In a large bowl, combine potatoes, sour cream, butter, cream cheese, salt, and pepper. Using a potato masher, mash potatoes to desired consistency.

Our Birthdays

May 2nd was Dru Davis's 14th Birthday. Which means the next day, May 3rd was my 34th Birthday. So Kyle took us all out to eat at our favorite Mexican restaurant in Scottsdale, X-Tapa Joe's. Yummy!

The 1-Year Checkup

On May 1st, Trevor went to see the Dr. She continued to monitor Trevor's growth and development. Trevor's height is now 29 inches 3/4. His weight is 21 lbs. Trevor was due for three shots this month. Hep A (Hepatitis A), MMR (Measles, Mumps, Rubella) and VAR (Varicella-Chickenpox).

Ultimate Doubly Cheesy Mac 'N' Cheese

I made this yummy recipe the other night with grilled chicken. The secret is to add an extra layer of cheese at the end, then let it melt on top in the oven. Trevor really enjoyed this side dish.

4 tablespoons (1/2 stick) butter, cut into pieces, plus more for the baking dish
1/2 pound uncooked elbow macaroni
3 eggs, lightly beaten
1 cup milk
1/2 cup sour cream
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dry mustard powder
4 cups (1 pound) grated Cheddar cheese

Preheat the oven to 350. Butter a 2-quart flameproof baking dish. In a large pot of boiling salted water, cook the macaroni according to the package directions.

Meanwhile, in a medium bowl, mix together the butter, eggs, milk, sour cream, salt, pepper and mustard.

Drain the macaroni, transfer it to a large bowl, and stir in 2 cups of the cheese. Add the egg-and-milk mixture and stir to combine. Pour into the baking dish and bake for 30 minutes. Top with the remaining 2 cups cheese and put the baking dish under the broiler until bubbly and golden brown. Serve immediately.

Kristy and Nick stopped by Neil and Sherry's on April 27th, the night before we headed back to AZ. It was so nice to chat/see them. The funny thing was, Nick flew out to AZ the next week for a long weekend. I wish Kristy could have made the trip too.
