Trevor Is Eight Months (12/24/08)

Whoa! Where is Trevor going? He's up, he's steady, he's hanging on-and he's navigating his way through the house! He has mastered the art of cruising in his walker. We have a ranch (so no stairs) and tile all over the house. So this little guy is busy.

The month will be filled with more milestones and developments. Trevor is still our happy-go-lucky, I-love-everybody child. It will probably be hard to watch, when the stranger anxiety sets in. Trevor loves his toys, he can not get enough of Mom's home cooking in his diet and he loves banging the pots and pans till we are deaf. It's fun! Trevor is also starting to show an interest in-yikes-TV.

Trevor does not have a well-baby visit this month. He checks back in the office next month for a full examination and, shots.

Tater Tot Casserole

OK, so lately I have been on a slow cooker kick. It's just so easy to put a recipe together in the morning and have dinner ready for you and your family that evening. So Monday afternoon I put this casserole in the slow cooker and it was ready a few hours later. Trevor even enjoyed this meal.

1 (32 oz.) bag frozen Tater Tots
1 lb. ground beef (browned)
1/2 t. salt
1/4 t. pepper
1 T. dried onions
2 (14 1/2 oz.) cans green beans (drained)
1 (10 3/4 oz.) can cream of mushroom soup
1/4 cup milk

Line slow cooker with frozen Tater Tots. Combine the remaining ingredients and pour over Tots. Cover and cook on high for 3 hours. It's that easy and good!

Slow Cooker Beef Stew

Sunday morning I put this recipe together in the slow cooker. It was a wonderful dinner for the three of us. Yes, I said three of us. I pureed some for Trevor. He loved it.

1 1/2 lbs. beef stew meat
4 T. flour
4 large potatoes (peeled and cut into chunks)
1/2 lb. baby carrots
1 large onion (cut into chunks, use to your liking)
2 celery stalks (cut into chunks)
2 envelopes brown gravy mix
3 cups water
1 bay leaf
1 t. salt
1 t. pepper

Spray inside of slow cooker with nonstick spray. Toss stew meat with flour to thoroughly coat the meat. Add the potatoes, carrots, onion and celery. Mix the envelopes of gravy mix with 3 cups of water and add to slow cooker. Add the bay leaf, salt and pepper. Cover and cook in slow cooker on low for 9 hours. Remove bay leaf before serving. This was very good!

Hopscotch Cookies

Friday I made these Christmas cookies that a friend in Lincoln, NE shared with me. Her Mom always made these at Christmas and she continued the tradition, however, her children liked them so much that she often made them for church or other events.

1 pkg. butterscotch chips
1 1/2 c. peanut butter
3 oz. chow mein noodles
2 c. miniature marshmallows

Melt the butterscotch chips and peanut butter over low heat. Mix the cow mein noodles and marshmallows in a bowl. Pour the melted mixture over and stir until the noodles and marshmallows are covered. Drop by heaping teaspoons onto waxed paper. Chill. Store in refrigerator. I should have doubled this recipe! That's OK, I will just make more. Hope you and your family enjoy.

Uncle Mark Arrived With Cookies

Tonight Uncle Mark came out to our house with a wonderful plate of cookies. It was great to see him. We enjoyed the company.

Brett's Chirstmas Party

Friday evening the three of us went to Brett's Christmas party in Scottsdale. It was so much fun. And Trevor was a wonderful baby.
