Grill-Worthy Weather For Father's Day
Sunday June 21st was Matt's second Father's Day. I think he had a great day with his family. We let him sleep in, he did some yard work/pool work. And then he spent the afternoon in the recliner watching the U.S. Open. We did grill chicken for dinner, boiled red potatoes and I made Layered Vegetable Casserole. It was so good. I will share the recipe later.

Itty Bitty Beach Party
On Friday June 12th, Trevor and I went to a beach party for ages 6 & under at the Paradise Valley Pool in PHX. It was so fun. Water safety instruction, games, dance contests, swimsuit contests, refreshments, sunglasses and more. Sponsored by CIGNA HealthCare of Arizona and the City of Phoenix Parks and Recreation Department.

Wildman Phil
On Wednesday June 10th, Trevor and I went to see Wildman Phil at the Harmon Library in PHX. He was very entertaining and informative with his live animal show. It was a fun hour!
This tortoise is missing a leg. So Wildman Phil helps him out with a wheel. Look at the half apple that he is getting ready to eat. And he ate it all.

Salisbury Steak
Last week I made this recipe that was very good. I served it with mashed potatoes and green beans.
1 can condensed onion soup
1 1/2 lbs. ground beef
1 T. flour
1 egg, beaten
1/2 tsp prepared mustard
1/2 cup fine bread crumbs
1/4 cup catsup
1/4 cup water
1/4 tsp salt
1 T. Worcestershire sauce
Combine 1/3 cup of onion soup with meat, egg, crumbs, salt and pepper. Shape into patties and brown; drain. Blend remaining soup with flour and remaining ingredients. Cover and cook over low heat for 20 minutes.

Evening At The Driving Range
Spaghetti & Meat Saue
Last week I made this recipe with ground turkey instead of ground beef. It was good.
1 lb. ground beef or ground turkey
1 onion, chopped (use to your liking)
1 small can tomato paste
1/2 cup water
1 cup tomato juice
salt and pepper to taste
1 tsp. dried basil
1 tsp. dried parsley flakes
1/2 tsp. oregano
2 cloves garlic, crushed
1 12-oz. pkg. spaghetti, cooked
Parmesan cheese
Cook ground meat with onion and garlic until meat is browned. Drain. combine the herb seasonings, salt, pepper, tomato paste, tomato juice and water with meat. Simmer, covered, for 15 minutes. Serve over hot, drained spaghetti.
