Grilled Hamburgers

Even though we don't eat all eight burgers, I make the whole recipe and freeze the leftovers already grilled. Warmed in the microwave, they make a quick meal and taste fresh off the grill!

2 pounds lean ground beef
1/2 cup quick-cooking or rolled oats
1/4 cup milk
1 egg, beaten
1/4 cup ketchup
1/2 cup chopped onion (use to your liking)
3 teaspoons finely diced green pepper
1 teaspoon salt
Dash pepper
8 hamburger buns
Lettuce leaves, optional
Sliced tomato, optional

Combine first nine ingredients in a large bowl and mix well. Shape into eight patties. Grill until burgers reach desired doneness. Serve on buns with lettuce and tomato if desired.

Stuffed Roast Pepper Soup

This was so yummy! You can use a variety of peppers to give it plenty of eye appeal (colorful).

2 pounds ground beef
1/2 medium onion, chopped (use to your liking)
6 cups water
8 beef bouillon cubes
2 cans (28 ounces each) tomatoes with liquid, cut up
2 cups cooked rice
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon paprika
3 green, yellow or sweet red peppers, seeded and chopped (use to your liking)

In a large Dutch oven or soup kettle, cook ground beef with onion until the meat is brown and the onion is tender; drain. Add water, bouillon, tomatoes, rice and seasonings. Bring to a boil; reduce heat and simmer, covered, for 1 hour. Add chopped peppers; cook, uncovered, for 15 minutes.

When I put (use to your liking) that means that I did not use as much as the recipe called for. That is just to much onion and peppers for myself and family.

Merry Christmas

Friday December 25th 2009 was so special. Seeing Christmas through Trevor's eye's was just amazing. He gave Matt and I a wonderful Christmas gift. He let us all sleep in until 8:45am. Best gift ever. We started with his stocking. It had an Elmo DVD, animal crackers and M&M's. Trevor had to open the animal crackers right away. We finally got him into the front living room where Santa had left some pretty cool gifts. Just seeing the smile on Trevor's face and watching his eyes become so big made my heart melt. Some of Trevor's highlights were his school bus with 250 balls, basketball hoop with basketball, motorcycle and wagon. The first hour of the morning was spent pulling Trevor around in the wagon with his animal crackers and water. We finally finished opening gifts by noon.

Birthday cake time and a break from our UNO Game. I think any of us at the table playing (Mark, Brianna, Lorie, Dru Davis, Ashley, Nick and I) would say that was the longest UNO game ever. Over three hours!

Al's Birthday was on Christmas Day.

Christmas Eve

Thursday December 24th was a wonderful day. Trevor turned 20 months. Matt had the day off. So Matt, Trevor and I spent the day together. We attended Christmas Eve service at our church here in Mesa at 5:00pm. Then we headed up the hill to Scottsdale and spent the evening with my Dad and family.
